

I just came back from a trip to San Antonio and, of course, spent a lot of time wandering the Riverwalk and eating at some of the restaurants there. One restaurant, Boudros, made a fresh guacamole, putting it all together by our table. Here's the recipe from what I can remember.
Squeeze the juice of 1/2 orange and 1 lime into a bowl.
Slice open two ripe avocados and take out the flesh; cut up with a knife into smallish chunks (do not mash).
Add and mix about a tablespoon of chopped roasted tomatoes and roasted red peppers mix. (Chop and mix these together beforehand.)
Add and mix about a tablespoon of finely chopped red onion.
Add salt/pepper and chopped cilantro (this last one is optional for me!)
Serve with corn chips.
